I usually cook it for about 6 hours when I cook it on the stovetop, Rom.
Do the spice rub the night before, so that it has a chance to really work into the pork. And then just leave it on the lowest setting on the stovetop for about 6 hours before you shred it and then simmer it again.

when i did oxtail, it was on the stove top for about 5 hours. i just chose a day when i had lots of housework and wasn't going anywhere.
if something can be done in the stove, i like to set the timer so it finishes cooking about 30 minutes before i get up--then it's cool enough to go directly into the fridge before i go to work.
