Looks like I'm going to Seoul for work mid May. Anyone been and got recommendations for how to get the best out of the city in 1 day (I'm assuming that's all I've have). If I had more is there any easy day trip out of the city.

Sorry - I only had two overnights on the way through to London so didn't really see much other than the peninsular that the airport is on. It was Dec both times and freezing cold, and I was tired after a years work, so didn't venture far.

Might depend on the weather, but Namsan Tower has a good view of the city. You can walk up or take the tram.
There are a couple of palaces to have a look around if the weather is good. If the weather is bad, it's pretty miserable as there's not much cover.
Insadong is the touristy stretch, but it's pedestrian only so the chances of dying by vehicle are reduced.
There are two big markets: Namdaemun and Dongdaemun.

We had two nights there last year. Choose one or two things you want to do and stick with that - don't try to get everywhere. We wandered round Bukchon to check out the buildings, walked down to one of the palaces and the huge gates. And then the hotel we were staying at was near the Cheonggyecheon stream so we did a walk along that. I don't know how much time I'll have to myself. Is there anywhere central that's good for tourist shopping (or fabric/yarn)?

One or both of the markets will have touristy shopping. One of them will have yarn/ fabric etc. Expect to pay a premium for good yarn as it is mostly imported.
