As I will have 9 days off and lots of time on my hands I am looking for easy warm breakfast options – ideally for one person, which makes it tricky. Not a big fan of eggs for breakfast, and way too lazy to make pancakes from scratch for one.
Stumbled over breakfast ideas on a website I used a lot for slow cooker and Mexican dishes

Both look yummy – and easily to prepare in advance. But all still looking for savory non egg based ideas. I don’t mind eggs, as long as they are not the main ingredient, like in fritattas… Somebody mentioned And bonus points for any dish that you can prepare in advance, or if it’s a bigger portion (like the two links above) can freeze easily.
I usually just have bake up Croissants at weekends, or cereal during the week, but it gets kind of boring. But I also don’t feel like cooking up a storm when I just got up. So I never even tried to make French toast, which I like when I eat out – but it kind of sounded like a mess TBH. Somebody mentioned biscuits and gravy - seems to be a US southern thing? But also looks like a lot of work, like something I might try in a restaurant but not cook from scratch if I don't know if I enjoy it...

my favourite is mushrooms and tomato on toast, and like to get fancy bread from the french bakery to toast and serve it on.
it's about five - ten minutes of frying.
If I make mashed potato I'll sometimes make extra and then make have a fry up the next day - some mushrooms, grilled tomato halves, spek or bacon... but that's a bit more effort than I want to go with most days.
I also make porridge quite often in winter, but you might have to have been brought up with it to appreciate it.
Occasionally make pancakes, but then seal the excess batter into a jar to have a day or two later - just shake before using and it should be fine.

I make french omlets, yogurt with fruit and granola, brioche with cream cheese and jam, oatmeal with honey.
I'm going to be working from home for the next 4 weeks. Breakfast at home every day. I might teach myself to make bread pudding.

I have frozen crepes in the freezer for an easy weekend breakfast treat. You can microwave them individually and add your topping. The ones we buy are gluten free for the kids but they taste pretty good.

I like Q's idea - I sometimes have what we call a "fry up" - just leave out the eggs. Of course here in Australia we would add avocado to the toast!

Biscuits and sausage gravy can be really good.
I'm doing bacon on brioche with cream cheese tomorrow because I figured out how to to do the bacon in the oven so I don't have to stand over it.
Bagels with lox and onion...

I like Q's idea - I sometimes have what we call a "fry up" - just leave out the eggs. Of course here in Australia we would add avocado to the toast! I sometimes do that with scrambled eggs, and add a bit of salsa to spice up my morning. But was skipping egg options for OP's request Or the classic, brown bread toasted with vegemite and avocado. But I think you have to be introduced to vegemite before your tastebuds have fully formed to appreciate this option.

I think they do crepes and pancakes you can freeze here as well, good idea. And mushrooms on toasted bread sounds yum! Plus all things bacon...I really need to find a way to get streaky bacon crispy, bit tired of the UK style bacon.

Melt some butter in a saucepan, add a couple of chopped tomatoes, skin on, and cook gently. Serve on two hot pieces of buttered toast. A healthier option is to cook in olive oil instead of butter.
Not very original, but as a child, we had sardines on toast or baked beans on toast which was a special treat. Mum always drained the sardines, then added vinegar and salt and mashed them together. Mmm yum.
Croissant with bacon and tomato, even better with scrambled egg.

I usually have what used to be called Continental Breakfast - fruit or juice, caffeinated beverage and some sort of bread, roll or muffin. I'm first of all not that hungry and second, insufficiently coordinated for any real cooking.

make regular pancakes, from scratch or a mix. Either keep the extra batter for the next day, or make all the batter, and freeze extras--put parchment paper between them so they don't stick. pop in the toaster whenever wanted.
Overnight oats--the ones online are often very complicated, but it can be as simple as some nuts and raisins. Also works well to take to work as a snack or lunch.
I find that for more complex things, like a potato/egg/bacon hash, prepping the night before so that it just goes into the frying pan in the morning makes life easier.
But I will happily eat leftover curry for breakfast, so my recommends don't always work.

That’s how I prepare Uncle Toby’s traditional oats. I’m not sure about grams, I use 1/4 cup oats to 2/3 cup water. 1.5 minutes on high, stir, 1 minute on high. I add cold milk after microwaving. If I had to prepare them any other way, I wouldn’t bother.
