I had planned to make tofu tonight but then remembered that I have a writing group meeting for which I haven't written anything, so instead I picked up some salmon at lunch and made that. Very simply done, just baked with olive oil, salt, pepper, za'ataar.

getting back into the Bovril habit. A cup of this in the afternoon instead of hunting for my preferred snack (some form of carbohydrate loaded with salty fat, not good for the internal organs).

My diet this week has been sandwiches, pizza and not getting home till 8.30pm, which might explain why I feel crap. Have tried to eat some fruit too but it's not helping, too many carbs.

That doesn't sound good.
Tonight, we have guests (i think), so roasted padron peppers with manchego cheese, and black bean loaded nachos. I spent £100+ on groceries that were delivered today, and managed to not have ANYTHING that resembles a meal. But my pantry is fully stocked, and we have wine.
Our guests flew in this morning and are sightseeing in another town, and having dinner there. So we're having leftovers. WOohoo!

Dinner was "tofu a la Catalana," i.e., miso-marinated tofu stir-fried with the usual stuff but then with leftover Espinacas a la Catalana thrown in. Actually very good, I'll have to remember to order too much tapas the night before I'm planning to make tofu again in the future.

Veggie quesadillas, which I made with a veg combo of Rotel hatch chili tomatoes, onions, garlic, and the remainder of the bok choy that I didn't use for the tofu; wine; and your choice of three types of ice cream (Gooey Butter Cake, stracciatella, or guava)

Quick Chili.
I used the bacon fat from this mornings breakfast to saute the onions and peppers, used ground beef instead of stew beef, and no jalapenos because I just don't like that kind of heat. Just a powdered chili mix.

mmm. bacon fat. I have lots of duck fat left over from sunday's dinner, everything is getting fried in that.
Help. tonight, we're having spinach/ricotta ravioli with butter/sage topping. THere isn't enought for a full meal. I don't have salad fixings, and am not heading out to get any.
What else do we eat with that? I have a lot of roasted veggies, but that just seems a bit wierd to have on the side. I also have pulses, eggs, and cooked duck meat.

a fried egg makes everything better.
I had this bright idea, because i had leftover fresh lasagne sheets, that I would make another set of ravioli. But the pasta was a bit dry, and wouldn't stick, so i just sliced it up and mixed it all together. it were proper tasty.
of course, in the middle of eating, i realised that if i'd cooked the pasta for a minute, it would have been sticky...
oh well.

Indo-Italo-Mex soup (i.e., leftover spicy tomato-veg quesadilla filling mixed with leftover lentil soup that I'd added a bit of garam masala to, with an Italian sausage and farfalle thrown in, with a chopped avocado and cheese on top).
Sounds terrifying but it's actually pretty good.

Yup. Yesterday, we had a roasted kuri pumpkin with a bunch of other veggies and pulses, plus 'Indonesian Rice' which was tasty. Today, the leftover veg will be mixed with potatoes and cheese for a more quasi Mexican vibe.
