Fail! The icing went all grainy... Doesn't help that I have NO idea what they are space to taste like/ what the consistency should be etc lol

interesting. they look like they should have kind of a lammington consistency on the inside, but with a "cake icing" on the outside.
fwiw, sleepless baking is definately a figjam thing this week: I was up baking anzac biscuits, banana cake and banana/maple/pecan muffins at 3am sunday night

i'm thinking the grainy icing thing is a matter of sifting the icing sugar (something I rarely bother to do, hence I tend to have grainy/lumpy icing on my cakes)
