Our cherry tree has gone crazy this year and I'm drowning in cherries.
I've made some jam and am going to preserve some in brandy and some in vodka for the colder months.
Pie's a bit hard because we're a gluten-free household and gluten-free pastry's rubbish.
What else can I do? We're eating as many as we can face.
Anyone have a good cherry cake recipe? Further inspiration?
Help!

I'll second cherry sorbet or ice cream.
Stuff a chook with cherry stuffing.
Pickled cherries are delicious (google a recipe or I think Stephanie Alexander has one in her book). Eat them with cheese or cold meat (ham etc).
I haven't tried it, but maybe cherry paste might work (like quince paste). That would use a lot.
Have a stand outside your house and sell them? Apparently this year is supposed to be a bumper year for cherries, so perhaps your experience is confirming this.
They've only just started to appear in our market over the last two weeks.

Thank you folks - I have an ice-cream maker attachment for my mixmaster but hadn't thought of that I love the idea of stuffing and pickled cherries. We don't eat much dessert but my folks will be here this week so perhaps we could so the crumble then. I gave some to friends we caught up with this morning. I also made some individual cherry pies this morning with a gf pastry which actually worked

Will they freeze and could they be used for icecream or sorbet later? How I wish they could be sent here as I love them but their cost is horrendous.

Drying should be possible too.

In eastern europe you have sour cherrie soup, you could look up a recipe for that.
Jealous of all the cherries. I LOVE cherries!
Oh, I once dried cherries (after unpitting them) and used them in rocky road, it was yum. Recipe is on my blog somewhere.
