I'm making dim sum tomorrow and for one of the recipes I need this leave vegetable. Haven't been able to find it in the Chinese shop, haven't heard of it before. Am thinking of replacing it with chives and maybe a chopped up onion or spring onions. should be fine, right? (I'm still not good cooking without a recipe.... )

The flavour would be similar but the texture may not be. Are garlic chives available where you are as they are slightly coarser in texture?

Hmm I've never seen wild garlic in shops, but I get loads of it in my garden. It's the wrong season for it just now. Garlic chives would be a good substitute, alternatively I'd put in some bulb garlic for flavour and/or spinach for texture.

Thanks. I did actually get garlic chives, but the recipe wants 350gr which seems like quite a lot. Will use that in any case.

How did it turn out?
I was having a Chinese cooking lark during the week of Chinese new year.
Wild garlic is popular in Germany in the spring, where it's known as Bärlauch. I bring back the dried kind from Germany every year. Does not exist in NL in either fresh or dried form.

the dumplings were good! ended up adding some garlic chives and spinach which worked.

Glad they turned out well! The wild garlic is now out in my garden... Trying to think of something I can do with it for Easter lunch.

i think i have garlic growing in a pot in my 'garden.' i'll test it in a month.

I want to make them again next week when we have Easter break. Re garlic. I have it in pots in the back garden, has long slender greens but no bulbs. Don't know what went wrong last year. They are still alive and well, just no garlic. Mine:

The woodland by my house is full of wild garlic in the spring. The smell is amazing. But I've never used it in cooking.
