I am looking ahead and already dreading Christmas holidays/family visiting. I could do almost 3 weeks and would prefer leaving the US. Where can I go and have it be not a day (or longer) where things totally shut down? I realize SE Asia or a predominantly Muslim country is probably a good bet. Am I overlooking some destination?

I cannot believe you have brought up the C word in July!
That said, a Muslim country or Asia is probably a safe bet to escape most of the madness.

For a number of years I escaped to Turkey but it was colder than envisaged. They did New Years Night in quite a spectacular fashion which was fun.

If Asia thinking Thailand or Vietnam. I think I would steer clear of Xmas there. Or maybe a beach anywhere would make it seem not Christmassy.

If you want beach, then Australia works as well.
Yes, most places will close on Christmas Day, but public transport still works, and depending on where you are, quite a few little shops (think Asian supermarket type places) will still be open. Head to the beach for the actual day, stay for an amazing New Years celebration and enjoy the sun!

Sigh. I'm thinking of heading home for Christmas this year (that was last year's plan and we all know how that worked out.....).

We're escaping on Boxing Day to Asia. I can't wait! We're going to Singapore, Bangkok and Isaan for a little break in a nice private villa.
