Mince, kidney beans, onions, tomato-ey sauce, salt pepper and maybe chili powder, a bit of hot pepper of some kind....um....that's about it, I'm a heathen.

onions, garlic, chili pepper, a bit of cumin, then the mince, stir it up till the mince is cooked, then ad a small can of tomato paste and a couple of cups of water. simmer for a while, and then add the drained pinto or kidney beans. depending on what y ou want, one or two cans. simmer some more to set the flavours, cool. its better the next day. Some people put a lot of different things in like carrots and stuff, but like slim, i like it pure and simple. Real TexMex people say it really shouldn't have meat in it, but what the hell. And it's to taste, re the hotness. add whatever till its as hot as you want.

Mince, tinned tomatoes, tomato paste, kidney beans, cumin, coriander, chilli powder and a stock cube. I sometimes mince up some vegetables in the food processor and put those in too, if I'm trying to stave off scurvy for another day.

Personally I don't think coriander (which I love) belongs in chilli.
For my chilli I chuck the mince (500g) in a pot with a tin of tomatoes and 2 tins of red kidney beans (including the liquid) plus spices (chilli, oregano, cumin, paprika), 3-6 cloves of crushed garlic and cook until beans are almost done, then I add an onion.
If I'm making chilli-nese I add 3 grated carrots and mushrooms too.
Salt I add at the very end and not much - it's a better practice to add salt at the table.

White and red beans, chick peas, cumin, jar of salsa, chicken stock, ground turkey browned with loads of garlic. Serve with shredded pepper jack cheese and crackers or crusty bread. So, so good.

I tend to use black beans, not kidney beans.
And I"ve been known to add a 1/2 of a packet of a dried ranch dressing packet. Adds a certain depth.

Another vote for a bit of dark chocolate. I always have a little in the cupboard just for chilli.
I am a TOTAL heathen. I love the taco seasoning you can buy, so I use that with the tomatoes, minced beef etc.

Canayangel - frying the onions with star anise gives a wonderful flavour and the Marmite addition is a Heston Blumenthal thing. We add it to casseroles, pies, spag bol sauce - it almost replaces salt and gives a really good flavour.

Spicewise I use smoked paprika, cocoa powder, black pepper, oregano and cumin, along with fresh chillies and garlic. I usually use stewing steak, chorizo, tinned tomatoes, onion and kidney beans. Sometimes I'll add in a few other veggies.
I've used coffee sometimes (a la Jamie Oliver) which works pretty well, but I wouldn't add both cocoa and coffee, as they both serve the same purpose to add depth and richness.

I put baked beans or kidney beans, cumin, chilli pepper or Tabasco if I can't be arsed to chop a chilli, cocoa, balsamic vinegar. I also put sweetcorn in, just because I love sweetcorn. Oh and beef mince, carrots and onion, beef stock and maybe green pepper.

Timely thread, since I plan on making chili tonight. I make it à la slim only I also add juice of a lime or half lemon and a green pepper (capsicum, bell pepper). I don't add cilantro to it but rather chop up a bunch of it and put that and grated cheese on top when it's done.
