On Saturday I bought some lamb, in a cut called in German "Lammhüfte" (literally lamb haunch or hip). It was very thick pieces, looking like this: www.grillsportverein.de/bilderupload/cruiser/lammhuefte/bild_01.jpgI don't know what this is called in English. The dictionary suggests lamb shank, but I don't think this is right, since to me, lamb shanks come with a bone in and this had no bone, and the "hip" element seems to suggest it's from the upper part of the leg, whereas a shank is the lower part. This is pure curiosity, we've eaten it already...

^^ ja wol. most probably the leg cut. shoulder cut is tougher and does not look like a steak, needs longer cooking time as well. actually, hüfte is not shank at all. it's the hip area, 'keule'. hmmmmm....rosa gebratene Lammhüfte mit Rosmarin und Knoblauch! dazu eine ganze Flasche Wein Blaufränkisch/Lemberger aus Baden-Württemberg. Einfach himmlisch!

Thanks all :-) Yes, Raised, I actually managed to slightly overcook them so they weren't as pink as I had wanted... but still very tasty.
