I haven't quite accepted peas yet - it's the squishy peas/carrots mix that traumatized me. But they're better now?

IN NZ you can buy BABY frozen peas. Find those if you have them. The absolute best.

When I was little people thought it was fancy to buy these French canned baby peas. They were kind of gray, and I don't remember them too fondly. But maybe frozen will be the key! Yeah I have been damaged by my peas experiences.

Oh these are not grey at all. They are bright green tiny crispy sweet bursts of pea-ness.

A very easy and super fast meal is 2 minute noodles with a small handfull of frozen peas and another of frozen corn niblets. Add an egg or two to the mix if you wish. All done in around 4 minutes and there's very little washing up.
Right now I'm buying tomatoes for $2.50 a kg, so tonight it'll be a kg of tomatoes stewed with sausage (ham or bacon are also good if there's some in the fridge) and a few slurps of tabasco sauce.
I'll try a bbq on Wednesday.

The bummer is that I used to pride myself on my cooking, on sharing a well prepared and thought out meal.
I bought a multi cooker (slow cooker and pressure cooker) around 3 months ago but haven't even bothered opening the packaging - inertia and hospitalisations have taken their toll, but gradually I am feeling better.

Slow cookers are generally better for winter food, in my opinion. Got it also for the pressure cooker feature - great for corned silverside (I hope)

One of my few (to date) concessions to not wanting to cook at times is frozen pizza. It’s something I don’t usually make and if I do (like bbq pizza) it’s a bit of a production.

I cook for one in the same way I cook for 4 - I just freeze the other three portions. Which means I pretty much cook only once, maybe twice a week, and always a have a home cooked meal after work. Thinking from the top of my head – in the freezer right now – lasagne, Bolognese sauce, Chicken teriyaki with rice, enchiladas, Mexican rice with chorizo and cheese and beans, macaroni cheese, thai red curry, shredded sweet chili chicken with udon noodles (slow cooker favourite). I don’t tend to pay for take out (the prices have become ridiculous – I can have at least 3 homecooked meals for one take out!).
Oh, and frozen veggies are a single cooks friend – the quality is great, I just slightly steam them or add the to stir fries. No waste as there would be if I would buy a whole broccoli. Exception – bell peppers/ capsicum. They get mushy IMO.
Grew up with powdered mash and just discovered the other kind when I was about 30 – what a revelation! I tend to buy ready mash in the cooler section where the veggies are – never looked for frozen version.

frozen veg is all levels of wonderful.
I have a lot of duck stock, so I think I might get a big bag of frozen broccoli and some silken tofu on the next food order, and just make "cream" of broccoli soup.
peas: put what you want in a bowl, top with boiling water, let sit one minute. Drain, add more, wait a minute, probably ready to eat. Bright green, firm, tasty.
bell peppers: attack with a blender thing, add cream, or silken tofu, maybe some miso or other seasoning, maybe a little water, stock, bean water--you have a sauce for rice/veggies.

Apart from tinned tomatoes, I don’t buy tinned vegetables, they are soft and mushy. Frozen is better. Many moons ago I did try tinned peas - yukkies, never again.

Actually, canned corn and potatoes can be turned into quick meals cutting out lots of prep. Canned pumpkin can easily be turned into soup.

We don’t have pumpkin pie. Pumpkin is savoury, not sweet. Although my friend’s mother, who was a great cook, used to make gramma pie, with a particular type of gourd. Pumpkin scones are a thing here, though.
Just googled gramma: it’s another name for butternut squash.

Strange - I did too. Mum used to serve "golden" potatoes to fool me and it worked. Until one day a school friend told me "that's just pumpkin mashed with potatoes".
I think it took a while to trust my mother again :-D
If we made pumpkin pie, which we don't, we would make it from scratch.
Pumpkin scones are made from scratch.
