It looks like we will be there for around 10 days in July.
What is the best way to do accommodation? AirBnB or is that ruined? Apartment hotels (any recommendations?)? Guest houses?
Any "off the beaten path" recommendations for things to do, especially day trips? And if anyone knows of a good company for doing coo safaris, please let me know!

The last time we went (~ nine years ago) we booked a self-catering 'cottage' via Sykes Cottages. We've used them for most of our accom in the UK for years and they are generally pretty reliable.
If you're arriving before the English summer holidays start it should be a bit cheaper and there should be more accom available.
Are you looking for 2 bedrooms or three? Usually considerably easier to find something with 2 bedrooms.

The main museum in Edinburgh is great and free. Not sure how your kids are with arty stuff but this place was a hit when Liiisa was visiting last summer (how was that a year ago already?!). www.jupiterartland.org/

Oh yeah, Jupiter Artland was very cool! I bet the kids would find it really interesting, since the art is placed in weird places in the woods. That was so much fun, tucano - I also can't believe that was a whole year ago. PS: I just noticed that you said you'd be there for 10 days. The place I mentioned above would be kinda pricey for that long (at least for my taste), but maybe she does longer-stay discounts.
