Having finally found a decent local fishmonger, I'm looking forward to cooking a lot more fish.
I have a few favourite recipes I used to do last time we had a decent fish place, but I'm always on the lookout for more.
So if you have any favourite fish recipes, please post them here!

I do a lot of "bake in tinfoil" dishes, no matter what kind of fish - trout, salmon, or white fish fillets. Just make a little bag out of tinfoil, with fish in, a squeeze of lemon juice, some lemon zest, chopped fresh herbs, a dash of olive oil, a dash (or more!) of white wine, then close up the tinfoil, pop in oven and bake until the fish is cooked through. Saves on washing up too, as the baking dish you put it in hardly gets dirty.

Pan fried sea bass fillets with lentil salsa
Grilled smoked mackerel salad
Hot smoked salmon, avocado and brown rice salad with radish and a honey and rice vinegar dressing
Thai red curry salmon
Cod & Chips (cor blimey guvnor!)

with fish simplest is best. and remember never to overcook. these days i grill it on the Weber, the rest of the year in the oven. riverhorse style.

I use the baking paper instead of the tin foil - still works, but should try the foil and see which way tastes better. Surfy, cod isn't something we get out here. Sophie, I've never had chowder. That one would be out with food intolerances with the tomato and a few other things, but I might see what other fish soupy things I can find.
