and also, i'm suddenly desperate for a food mill.
i've got about 10lbs of apples and am making some applesauce. but some of the apples are really tart--possibly crabapple (although i don't see many of those in the uk?), so i don't want to add big amounts of sugar.
i've found a recipe for apple and chili chutney-any other ideas?

I never add sugar, just make the applesauce and freeze it (and yes, a food mill makes the job easy) then sweeten and flavour depending on what I use it for. If I use it for making cakes or muffins, then it is ready upon defrosting. If I use it as a sauce or dessert, I season accordingly. I have also canned it in sealers. Another idea is vegetarian mince meat for Christmas tarts.

i never add sugar either, and i don't peel the apples. i made this in the past and added a dollop of honey to the top of each jar, but that was as much for looks. my house smells good. i'm going to try the chutney with one batch of the super tart apples. live dangerously. learn new stuff...
