I've taken to doing stewed apple (without sugar, because the apples are sweet anyway) to add to the top of porridge for breakfast. Sweetens the porridge without adding any sugar.
You could make and freeze the apples stewed for later use. Or chutney - but while I think chutney is fabulously tasty, it wouldn't come under the heading of healthy for me. I've made chutney before, I've seen how much sugar is added.

Apple sauce - can be eaten on its own, mixed with cereals or yogurts, used in baked goods in place of oils.

apple sauce is incredibly easy, and can be made with no added sugar. i made apple chili jelly, and apple chutney. time consuming, but not hard. and really, a lot of the work is letting something bubble quietly on the stove.
scour the local charity shops for a food mill. i bought one for 2 pounds at oxfam. this will allow you to skip the coring and peeling of apples (or other fruit), which not only saves time, but also means you get maximum apple. i try to get rid of seeds before cooking down, because they have some toxins in which are fine in the odd apple, but not if you get through several quickly.
our fruit juice switched to plastic bottles, which i put through the diswasher and fill 3/4 with apple sauce before freezing. i can then take one out when i want the sauce, for eating or baking. apple sauce can be used as a partial sugar substitute in many cakes, muffins, and cookies.
finally, i made a lovely sauce with roasted apples, including cardamon. it came out like butter, it's just lovely.
you could also dry them to make apple rings, but i've never tried it myself.

food millsthey come in metal or plastic. i bought used because they can be very pricey. my mom has a fabulous one, 30 yrs old, which i may try to steal next time i'm home.

Apple butter is good, too. Nice on toast or stirred into hot cereal. Also, tasty spread on pancakes instead of butter. I always just use a random online recipe and halve the amount of sugar they call for.

also, a slow cooker makes apple sauce or apple butter much easier, as it is less likely to burn. my apple sauce is very tart, but we just add honey if we want it sweeter. tart, it goes well with rich meats (yeah, not an issue for surfy!) or sweet veg like sweet potatoes, parsnip, butternut squash... yum.

Stewed apples - can be eaten as a dessert with/without cream. custard or ice cream. Great added to cereal too.
