I like: Blutwrst (never had Blutzungewurst, but i like tongue so I would probably like it, perhaps not as much as Blutwurst); nopalitos (Opuntia cactus paddles); head cheese; and milt (soft roe; fish semen).
I'm fine with chicha, marmite, and vegemite, but don't seek them out.
I'm sure i'd be fine with either a pie floater or a bacon explosion. I would actively look for a bacon explosion. You don't have to eat any more of it that you would ordinarily eat of either bacon or sausage, afer all.
I would probably try everything else there if it were offered to me, except perhaps the cobra wine, which I don't think is intended to taste good.

had homemade chicha in Chivay (deep in the Colca valley) offered by dancing indigenous farmers at a feast (we gave them some cash as a donation later). tastes like corn and nothing more. i remember being terrified of drinking from the same big cup that was being passed around. turned out it was one of the best memories of Peru.
i saw (in Norway) blood sausage with lung bits and other 'stuff' in it. should have bought it just to try.
i'm surprised drinking/eating pig's/duck's blood like they do in northern Vietnam isn't mentioned. i almost ate it in Sapa, north Vietnam, at the market. it looked so raw i freaked out, as if it was from a freshly slaughtered animal. the blood was in small bowls and one would just drink or eat it straight like that. that said, i love blood, especially the blood sausages served as a snack in Duesseldorf and in soups you eat all over S.E. Asia.
on the other hand duck embryo is rather nice with fresh herbs and a salt-pepper-lemon juice dipping sauce.
