I like to batch cook at the weekend, it makes the life during the week way easier! I generally tend to do bolognese sauce, chill (meat or veg), soups or curry.
I'm looking for ideas of weight watchers friendly batch cooking/freezer friendly ideas.

Quorn tikka masala was a hit and froze well for Master Surfy - 10 points per serving, inc 60g of brown basmati rice
Roast parnsip soup - 4 points per serving and perfect for lunch with some homemade garlic croutons - 3 points per portion
Salmon and broccoli pasta bake - 12 points per serving
Veggie lasagne - 12 points per serving

I've made a lentil and barley soup that came to about 5 points, I think. Points came from homemade chicken stock and olive oil, without which it will taste like cardboard. Freezes well. Tastes even better with some sausage fried up in there, but then that adds another 3 points....

How did you point the homemade chicken stock? I'm planning a batch cooking marathon this weekend.

I searched it on the WW app and there's an entry for "homemade chicken broth," which is 1 point for 1 cup. Since we're not great at skimming fat off the stock, I charge myself 2 points for 1'cup.

I do a nice beef stew with bell peppers - I will find out the recipe for you. I think it's low in points. Or if you do simple start/ filling and healthy you can make all sorts of stews with meat, veg and pulses without counting the points.

Not a freezer meal, but if i've got the right veggies in a stir fry and rice is a winner low point, filling meal! 8 points including the rice!

I'm making a pizza tonight with eggplant as "crust". It should be about 7-8 points per serving.

I cannot visualise that Tina, but it reminds me of Sprites cauliflower crust pizza!
I've just had a stir fry with brown basmati and a soy baked salmon fillet. 12 points and absolutely delicious!
