i have a tin of this for tomorrow's lunch, but most recipes seem to call for an enourmous amout of sugar and lots of wierd herbs.
think it'd be ok with just a normal oil/vinegar dressing??

Always. I have it (in water and drained) with chopped toms, celery, red pepper and avocado and normal vinaigrette.

avocado. i knew i'd forgotten something on the grocery order.
i actually have none of those things you've mentioned, but the fridge is bursting so surely something can be eaten.

in the end,chopped mange tout peas, a little oil and vinegar, sqeeeze of lime, and just a spoonful of indian mixed pickle.

mmmmm.....
it's like lime pickle you get with poppadoms, with more veg, including mango. patak's is good, i'm having 'mothers' now but it's missing the 'crack' secret ingredient that i adore. i don't normally like spicy food, but this stuff has something special that i just inhale.

I think it would go great with bell peppers, tomatoes and avocado. Maybe some cooled down brown rice through it? Or corn?

Ooh yes, I like corn with beans. The sweetness means you don't need as much dressing. A dash of Tabasco is nice too.

tulip, i had none of those things either. small planning fail. also, it was originally for 2 ppl, then became for 3.
bizarrely, we had it as a first course and then had pheasant stew with tea biscuits.

I made it a couple times recently - just made a normal vinaigrette using EVOO, part balsamic vinegar and part cider vinegar, a dash of dijon mustard, clove of garlic, s&p - and then, since the variety of recipes I found called for wildly varying amounts of sugar (ranging from a couple teaspoons, to 2/3 of a cup!!), I just drizzled in a little bit of maple syrup.
Most recipes call for celery but I don't really like it, so I used peppers (red and green) and white onion to get some crunch.
