I can't remember what the thread that was asking for beetroot and other recipes is called, so I thought I start another one. There are some amazing recipes for beetroot, jerusalem artichokes, swede and potatoes here: www.riverford.co.uk/pages/recipebookletPlease do feel free to add yummy winter veg recipes to this thread

I peeled brussels sprouts and roasted them with a little salt, pepper, rosemary and olive oil for a half hour to make BS Chips. It's like crack.

Here's a link to the website for our weekly veg box, just plug in the name of the veggie you want recipes for and it brings up great healthy ones. www.boistfortvalleyfarm.com/recipes/This winter I've been addicted to roasted parsnips, can't get enough of them.

Treacle, the potato/egg recipe looks great!
I will definitely try it, and it's an easy one to make vegetarian. I can see making them for camping - wrap in foil and cook in the coals.

oweena - I love the look of them and am definitely going to try them - both veggie and with meat. I love vegetarian meals - but I can't stop eating meat altogether. That would do me in.

We are pescetarian (hate that word) and when I read the recipe I immediately thought how awesome they would be with a bit of fresh crab meat mixed in. Or small chunks of smoked salmon.
