they're probably 'fermenting' from dampness? shiitake mushrooms do have a strong smell but i'm not sure if they smell like beer. i have had beer made with shiitake mushrooms  |

ugh. i've stuck them in the freezer. it's too hot to make risotto here.

I have never noticed a particular smell-so yes, fermenting would be my guess, too. Unless you have a leaking beer can in the fridge.
