I hate it when that happens. I made a pasta bake at the weekend and it all went wrong - the pasta was overcooked (it was a cheaper brand then I usually use), the cheese was not falvourfull and melty, and the sauce didn't work out either. The whole thing is kind of edible, but pretty disgusting boring mush. I had two portions but yesterday decided (with a heavy heart) to bin the rest. What a waste, especially as it's a dish I have done so many times and it's usually really nice!
When was the last time you really messed up a dish and had to bin it?

There's one on the stove now. My chilli turned out shit. I just cannot bring myself to throw away all that food though so am going to try and jazz it up at lunchtime.

Hinmself tried a new way of cooking steak. It was inedible. I made some pretty hideous soup the other week - it tasted of mud.
What did you put i the chilli, and what's wrong with it? I may have helpful suggestions. Or suggestions anyway.

I'm eating it now. I put more chillis in and some stock and lots of salt. It's a little better.

I made gravy the other night... from scratch (pan juices etc) and it looked and tasted like SHIT! the boys said it was great... ewww! give me Gravox/ bistro anytime

things rarely turn out like i think they should - probably why i don't cook more (which if i did cook more, then i'd probably be better at it).
waps - chilli is usually better the next day. i think it lets the favours take hold.

Years ago I was making a drambuie flavoured cheesecake with an ex of mine. Of course we started with the odd sip of drams as we were adding it to the cheesecake mix. So every time we tasted the mix we both thought it really doesn't taste like there's enough drams in there, so we'd add a little more.
When our guests tried it it nearly took there heads off and they politely declined it, whilst we happily scoffed ours down.
Next day I tried some in a non-drams induced state and it was truly disgusting.

I made Morroccan chicken for someone but because they decided to be an asshole and not show up I only ate it the first night. I threw it out because the second night it tasted terrible.

I cocked up gravy recently too. My cooking skills have atrophied.
I did quite a good job on the chocolate pavlova for Christmas though, but I went on about it a bit because I'm now one of those people who hardly ever cooks.

I messed up the Christmas cake this year. No idea how as I've used the same recipe for years and it's always turned out perfectly before. Never mind, at least my mince pies turned out well.
I've never mastered gravy but I think that's mainly because I rarely do a roast.
Sticks, having sampled MrS's superb cheesy poofs (fnar fnar), I'm not surprised you hardly ever cook.
