At this moment you can go and see The Art of the Brick at Amsterdam Expo (take the train to Amsterdam-Zuid), it's brilliant.
I also love the Hermitage, great exhibit on about the Silk Route.
9 straatjes is a nice shopping area. I LOVE Jordaan (but it's even more fun if you understand Dutch) and Noordermarkt area.
Gerard Doustraat is also good for quirky shopping.

Personal favorites?
Jordaan, Rembrandthuis, Rijksmuseum, the central library near Central Station, Prinsengracht, the building right in the middle of Nieuwmarkt, Vondelpark, the area more or less behind the red-light district (Krom Boomsloot, etc.)

NEMO!
The library was cool - we had lunch at the cafeteria there, enjoyed the views. And then the children's section was fantastisc.

1) Partying with the Dutch Mafia
2) that chocolate place Cookie took me to. Ok, that was a while ago. Wait - I think it was called Unlimited Delicious (?)
3) the herring! the stroopwafels! the beer!
4) those pink automat places, with the gross/fantastic sausage.
What not to do: don't eat the yellow licorice that tastes like pee

in addition to the above, I also really like the redeveloped area around the IJ and Central Station. You can take free ferries across the water to for example the EYE, the film museum with a cafe/restaurant and a great view across the water towards the city. Another I've been meaning to go to is Wilhelmina Dok (restaurant on the water also). On the city side of the water there are some cool places such as the Bimhuis (for jazz music) and there's a funky restaurant opposite that (Hannekes Boom) which is right on the water and looks towards NEMO.
I think there are also canal cruises which do an architecture tour of this relatively newly redeveloped part of the city which could be pretty good if that's what you're interested in.

Right, I thought of adding some of those areas, too, mei. Even without a tour, you can walk around Prinseneiland and the islands around there (to the West of Central Station) and Java-eiland (to the East).

shilgia covered everything except the Verzetsmuseum, the museum of the resistance.
Everything that I know of. I've noted mei's list for next time.
