I love smoked paprika, chipotle and thyme, use this combo in so many things. Yum yum!

i've been eating smoked merquén brought back from Chile, in everything savoury. it's been almost 2 years and my supply is dwindling fast (about 4kg!). as for the green stuff i love love love dried ramsons ( Allium ursinum), and fresh rosemary.

Tarragon is my catnip. Love that stuff.
I've also just discovered chinese five spice - for someone who is basically addicted to chinese food, this stuff is AMAZING.
If I make home-made oven chips / wedges, I throw over lots of salt, cracked black pepper, paprika and tarragon. Yummy.

sumac - go through loads of it. And I love my rosemary bush that is growing under our balcony - just being able to go and get it when I want it (rather than plan a trip to the shops) means it gets used in a lot more things!

Both basil and coriander make MrDaze feel really ill, so I never use them at home and miss them so much!

Gawd, I couldn't live without basil and coriander. I can't live without most herbs and spices actually. I use them in everything I cook really. I grow most of my own, but don't do coriander (although I recently tried again with a bit more success - it tends to bolt). Currently growing in my garden are: Sweet basil, lemon basil, thai basil, greek basil (well, it is summer!) Several varieties of chillies Thyme and lemon thyme oregano parsley rocket rosemary tarragon (mexican and french) mint vietnamese mint (or laksa mint) chives summer savoury Bay tree Curry leaf Lemongrass Kaffir lime Sage
And I'm sure there must be others that I've forgotten. I use them all, but some more than others (like basil, parsley, chillie, thyme)

Chili, hot paprika, pepperoncini, different types of pepper (white, black, mixed, cayenne, lemon pepper), garlic, oregano, majoran and dill are the main herbs. The there's cinammon for sweet stuff, different curry powder mixes,and so on...I think I have about 38 spices / herbs (dried) in my spicerack, plus more exotic stuff in the cupboard.

I love using herbs and spices, and have a whole shelf full of jars of them. In addition to things people have already mentioned, I use a lot of herbes de Provence - I have a lovely olive wood grinder for them which I bought in Nice.

Depends what I'm cooking, but usually - Fresh basil, coriander and thyme Tamarind paste Garam masala Ginger Chillies - red and jalapenos Cumin - I'm a little addicted to cumin Salt - as above

I go through smoked paprika like nobody's business. I add it to lots of stews and casseroles, and also sprinkle it over potato wedges/slices before I roast them in the oven. Mmmmmmmmm

there's this mixed spice called 'mixed chili' or 'mexican chili' and i put that on everything. except for waht i put 'ras el hanout' on. which i have none of now, and may need to buy.

Smoked paprika is a favourite, chilli, garlic, parsley, basil, salt isn't a herb or spice but I have a bit of a collection, pepper, lots of others. I have a nice herb patch with many things growing like garlic chives, mint, spring onions etc etc..
wombatrois, I always had the same issue with coriander bolting so quickly but recently online I bought seeds for a different variety of coriander called sawtooth corander and always have it on hand know. Tastes very similar but looks very different!

Paprika, cumin, chilli, garlic, lemon, lime, ginger, basil, sage, thyme, herbed de Provence.....ooh coriander (spice and herb). I need to dig a herb garden. Parsley is underrated. Chives. Oh hell, I could go on forever. I think if I had to choose one spice it would be cumin. One herb - coriander.
