I love baking bread. It's just so good.
But somehow I can't get brioche right.
Tried different recipes, but my dough won't rise when making brioche.
- I am using fresh yeast (with other doughs, it rises like mad with fresh yeast... not this dough) - I am kneading until I see purple - The salt doesn't contact the yeast before kneading - I have put the dough on a warm place to rest with warm/moist towel over the bowl.
I just don't get it.
Mopperdemopper.
Any suggestions?
(BTW - Even though my bread doesn't look pretty, it does taste fine)

Every time I try to make anything that needs rising it flops. I think I need a kitchen aid for kneading the dough...Also I am never able to mix egg white into a nice fluffy consistency. Sorry, no help, just sympathy.

Aww, glad I am not the only one.
Whenever I make different bread, the dough rises and the bread is a success. But brioche fails everytime. Should I just blame the French?

Yes!
Another idea is to let the dough rise without kneading, or with minimal kneading. Let the yeast do the work, so to speak.

Sorry, no help, just sympathy. when whisking egg whites - make sure the bowl is 100% clean, nothing extra in the whites - no bits of yellow or shell. Whisk, as with the bowl is to be clean and dry. Yes, it can take some time to get nice firm peaks to appear. Tulip - I have never made Brioche but I am wondering if too much handling could be the problem or the extra flour from all the kneading. As Wombatrois has suggested let the yeast do its work.

That's interesting, 'cause all the recipes I've tried explicitely said to knead until arms fall off. Hm.

I definately didn't knead for five minutes. My arms would fall off. Hm. I'll see about it next weekend.
