Please give me ideas for a few things to cook with stuff I already have at home, eg where I need to buy the minimum of extra ingredient!
Stuff I have in kitchen - tons of different pasta, different kinds of rice (basmati, whole grain, long grain, paella, risotto and yasmin rice), frozen veggies, all kinds of spices and stock cubes, canned tomatoes, beans of all kinds, gnocchi, dried mushrooms... In the fridge some dry cured ham, milk, 2 eggs and cream freche.
Happy to buy the odd thing, but want to minimise spending (and use up the obscene amount of food in my cupboards!)
Any ideas welcome.

Chuck veggies, beans, mushrooms, chopped ham into frying pan and sauté with a bit of oil. Chuck in random spices for flavour.
Add tinned tomatoes and a bit of water, add some tomato purée if you have any and a stock cube or two, depending on how much you're making or how flavourful you want it. Add uncooked rice or pasta, and simmer until rice/pasta is cooked. you could chuck in creme freche or stir in the eggs as well for good measure (and they'll thicken up the sauce if needed).
I would call it paella except that it's really just a mishmash of stuff. Tastes nice and is easy and versatile--just make sure the ingredients go together flavour-wise.
Sorry about the vague amounts, I can try to specify if needed but I usually just ballpark the ingredients.

a curry? i'm not very good at them, but bbc good food 'back to basics' has a three-step curry which looks easy. that would use tom sauce, spices, veggies, beans. maybe a bit of cream to add the taste?
a creamy mushroom sauce for the gnocchi
that's me for the moment...

Carbonara would use eggs, ham and creme freche, even if it wouldn't be a very purist recipe, usually eaten with spaghetti, but you don't have to.

Basmati - cook a pilaf style dish Risotto rice - cook a risotto (!) - use frozen veggies Pasta - I like the carbonara idea from snow Paella - use chickpeas and frozen vegies for a vegetarian version, or add the ham Gnocchi - you could make a tomato/bean sauce to go with this Pasta - again, a tomato sauce with beans
I'm planning on doing the same and have already started. I now need to buy some more chickpeas!

Chickpeas are a good idea...I don't tend to cook with tehm but love them when I eat out!
Will start tomorrow with some gnoocchi- will fry some garlic, add the ham, mushrooms, add the cooked gnocchi and the peas, stir through a teaspoon of cream fresh, add pepper / salt / pepperoncini, and sprinkle over some parmesan. Yum!
The parmesan was an unexpected gift from a friend who just got back from Italy and brought me a whole junk of it!

can i come over? good parmesan is wonderful.
i never did much with chickpeas until a couple of years ago. i hadn't realised how easy they are to use, and as a good source of protein i can throw them into something when i haven't got meat/eggs/dairy to bulk it up.
my hummus is gradually getting better. over the last few months, i was making it with a fork...

We have a cuboard clearout eating weeks here every now and then. I like how it forces you to get creative.
