i was trying to make a tiny posh dessert, based around mango sorbet. (chop mango, freeze, blend)
i read a few recipes but they were so complicated. i had a few ice cubes of coconut milk from the last time i made a curry, and i've been using them to sweeten my morning smoothies. (next time i may just drink the coconut milk straight.)
so i took 4 of those, melted them in the microwave in a small container--added a teaspoon of corn flour (corn starch), shook the container, heated, added more, shook, heated a little more--poof! jelly. mixed in some dried coconut and a bit of bacardi (but not enough, it turns out)
layering the mango and coconut in tiny dessert things (left over from a supermarket dessert), it turned out really yummy.

Glad your jelly was yummy. Do you usually use corn flour to make jelly? I haven't heard of that, we would use gelatine to make the jelly set.

normally i use it to make a thick gravy, because the gravy stays clear.
really i just wanted the coconut milk to thicken, but it set more like a jelly. possibly i put too much corn starch.
i never have gelatine in my cupboards!
