I made spinach and ricotta stuffed pancakes last night. I bought too much ricotta - any easy recipes that I can use it up with? Preferably easy and quick, due to my extreme knackerdness.

love riccotta. use it in lasagne. mix with a bit of cinnamon or honey and put in the centre of a cookie (like you would jam). or have cold with cinnamn and honey for dessert.
yum.
i'm planning to suggest it as a substitute for cottage cheese to two of our neighbours. they're indian, and eat something like cottage cheese and can't find it here.

I was going to say "just eat it straight out of the tub."
You can also put it in an omelette, with fried onions.

Mm, you just inspired me to eat a spinach and ricotta pizza. It was good... now I've got leftover ricotta as well though!

I had the omelette for lunch yesterday, it was LUSH.

I like webs recipe. Might take that for lunch, as the men don't like sweet potato.
I have never tried a sweet recipe. Must change that.
