I'm thinking of using up a $250 Red Balloon voucher I got from the last job on a cooking course. I'm looking to expand my cooking skills/dishes and I'm torn between doing another Thai one to build on what I know or Sri Lankan or Japanese for example. I want tasty dishes and if possible something that can be made reasonably healthy too. Any thoughts / suggestions?
If you had one, which cuisine would you chose and why?

I'm a hopeless cook but the classes I enjoyed most and use most were an Indian/Sri Lankan combination. The other I loved and had a fun time at was a French pastry class - but I've never ever made anything I learned - all too labour intensive for me.

So I've checked and in addition to Thai, Indian and Japanese there is Mexican, Spanish and how to cook duck that sounds interesting.

i can give you lots of links for mexican grew up in cali unless you are hand grinding a mole, it's pretty easy to master the basics

I did a one-off class when I went to Charleston last year on American southern cuisine. I enjoyed it; the chef-teacher and his daughter-assistant were lovely, and the other guests were great (except for this one kind of irritating cynical guy, but whatever). I've never cooked any of the things we made because we basically just cook the same 10 things on rotation because we just don't care that much and there are enough good restaurants around here that we just go there if we want something different, but I like cooking classes anyway as a form of entertainment.
But to answer your question, if I were going to take another course it would be Mexican; one of these days I'm going to go to Oaxaca and do that.

I do them for fun and the social aspect (the skills are a bonus!) In the last year I have done a number of baking courses (incl profiteroles, european bread, gateaux, confectionery) and recently a vietnamese cooking class. I love doing them Id rather spend money doing that than a night out drinking

personally, i'd go for sri lankan, only because i know nothing about it and i'd like to learn.
so, i'd either improve current skills, or fill a massive whole in my knowledge.

Of the two you mentioned, I'd choose Japanese as I don't like Indian/Sri Lankan foods. That said, I'd be inclined to choose the one that would be healthier and if you need to lose weight the one that you know you will cook at home.

Of those on offer Id probably go for the Sri Lankan one - I used to have a favourite Sri Lankan restaurant close to where I lived and it was fabulous and quite a distinct cuisine to Indian. Probably the best cooking course I've ever done was Moroccan food in Marrakech.
