if you haven't used and have no idea what is is for, you probably don't need it.
I do know it is used a lot in gluten free cooking.

it's a food additive. It's used as a thickener to bind foodstuffs together to stop them separating. Xanthan gum is found in commercially cooked foods, it isn't something you need to use for home cooking,

i sometimes like to do gluten-free cakes, so took it anyway.
phar, i've seen it as an additive, but they sell it here in the home-baking section of larger stores, and i now remember seeing it in the odd recipes.

Yep xanthum or guar gum can be really good for gf baking. I tend to use it for drier recipes but don't need it for cakes but do for cookies.
I don't use much. Maybe a teaspoon or half a teaspoon?

when everything is unpacked, and we start socialising a bit, i'll get to experimenting with gluten free. come to think, i think i saw a GF pasta, and i have a pasta maker...
