Do you like it? How do you prepare it?
I really like rabbit meat, soft and tasty. Yesterday I had some prepared for me. First, I thought we where having chicken but then I saw the shape of the rabbits head.
Traditionally in this family you all eat from the main plate but concentrate on the part in front of you, making it possible for the host to offer the best to the guest this way. Apperently this time it was the head. I hope I wasn't rude to ignore it and go for the thigh instead (which fortunately was right next to it).
Had the same thing once in Indonesia where the offered me chicken curry and specailly for me served some chicken feet. Used a napkin to cover that up.
Anyway, any good rabbit recipies to share? This one was with turmeric, ginger and some ras el hanout spices.

i haven't done rabbit, but i did do hare. i roasted it with bay leaves, juniper berries, covered in bacon slices and drained a glass of red wine over it.
next time i think i'll use ras el hanout. is there anything one cannot put ras el hanout on?

Mmm rabbit. Had a wonderful rabbit terrine at a restaurant on Wednesday nice - so tasty!
Love rabbit and red wine stews - can't wait for some cooler weather to cook these things.
Rabbit is an allowed meat on the elimination diet, but without being able to use any herbs other than garlic and chives and no wine I doubt it would be too tasty.

leave the garlic cloves in skin, slow roast the whole thing on 150 for 3hrs, maybe wrapped in tinfoil. are you allowed any fats to rub into the skin? juniper berries?
sprinkle chives on just before serving. should go ok with the sweet garlic? or skip chives and serve with roasted veg that have garlic.
oh i wish i had an often. i love left over veg slightly mashed and then refried... slurp.

I do wonder about juniper berries - they aren't in the list, but you are allowed gin!

You inspired me, leanut. Last night I cooked a couple of cut-up rabbits with carrot, celery, onion, garlic, apple, veggie stock, and cream. If I had had any calvados around I would have served it with that. It could have used mushrooms. Served over/with noodles.

Mmmmmmm! This thread is making my stomach growl. The very excellent butcher in Reading has rabbit - must think to get some, maybe make a slow-cooked casserole over the Easter weekend. The butcher will also cut the bunny up into pieces for you.
