for christmas, i got a cheese making kit. last week i made chevre, today mozzarella. it's a lot easier than i thought, especially the chevre. i'm looking forward to the others.
have you ever made cheese? any special ones? i'd love to figure out how to get that special rind on goat's cheese, where there is the rind, then the soft bit, then the creamy part.

Used to but anything other than the softer cheeses took far too much time and equipment so stuck to feta and similar things. My access to non pasteurised milk has disappeared - as has my thirst for experimentation.

hmm. the mozza was good last night, but this morning it feels... wrong. grilled cheese only for that. Hal, for the goats, i poured a litre of milk into a large pan and then hung the curds in a muslin over the kitchen sink tap. No different amount of space the kit was the one below, so the box is rather large but the equipment for storing is just a thermometer, cloth, and a couple of smaller plastic draining baskets, as well as the rennet tablets and citric acid. It came with spices, but I've just put them in my spice cupboard. THe Ultimate Cheese making kit!They are all soft cheeses, but if i enjoy it enough, i might start experimenting with hard. not likely in this flat, i don't have much space for new things to store. although, we are drinking down the wine that is taking up so much cupboard space...

i used jersey milk. i'm sure i could find buffalo, but haven't gone out to find it. i didn't follow the timings, so will try again properly! i also quartered the recipe, because 2 lbs of mozza is a lot for two people.
