I've offered to make a seafood dinnner for Boxing Day at the inlaws. There will only be 4 of us.
F-i-L can't have a lot of sugar or salt, and doesn't like spicy. M-i-L likes spice, but not raw fish. partner is mildly allergic to prawns and lobster (and possibly crab).
so far, I'm thinking scallops in bacon, Spanish gambas (giant shrimp), samphire, sea spinach if i can get it, smoked salmon on crackers, a clam chowder...
any other ideas? I'll likely do some roasted root veg on the side, because the inlaws like that. And I won't be working in my kitchen.
although, when we're back home, i might do another run for NYE...

a couple of years ago, i went bonkers with seafood on christmas eve, but now can't remember what i actually cooked aside from the Gambas prawns, because partner asked if i was trying to kill him. fish pie is yummy, and easy to make ahead of time.

Cullen skink is my favorite easy seafood thing to make. It's supposed to be made with smoked haddock, I think, but I just use smoked trout since that's easier to find here, and it's fine.
I should plan to make some now that it's getting cold again.

Yoghurt. Ha!! Probably leftover mince pies or such. I'm not really a dessert person, and as FiL has T2 diabetes, sweets are usually fruit.

I know - to me, a skink is a kind of lizard! But the description "smoked haddock chowder" sounded so good.

Every year I bring some brunch-y things to my mom's for Xmas morning, and I always have to remind myself that she doesn't like smoked fish. Baffling! I'll admit we had some canned kippers a week or so ago that were a little weird, but that was mainly the texture; they tasted fine.
