I was buying fish and chips at the local supermarket today, and the question came up, do you want gravy on your chips? My gut reaction was WITH FISH! Yuk. But then I discussed chips and gravy with the supermarket owners. Husband had never even heard of gravy before he arrived in this town. I’ve lived in several regional parts of NSW. In some gravy is almost mandatory. In Kyogle, you even get a stick to eat the gravy soaked chips.

I first learnt about chips with gravy at uni (Sydney Uni, so not regional but maybe the trend came from the regional students?)
On Friday during happy hour the food place near one of the bars would do a big tray of chips for $5. And the tray would be quartered up for one section with gravy, one with vinegar, one plain and one with lemon and pepper.

Chips and gravy is a northern thing in the UK, although not sure if it's the same type of gravy you have there.
I don't like soggy chips so it's not for me, even if I ate meat.

All I can say is mmmm, gravy (And not even being a vegetarian stops the gravy madness here, although I don't eat (veggie) roasts/ potatoes very often, they absolutely must come with gravy) Also - in case anyone wants to point out how gravy made from granules doesn't cut the mustard, save your condiments, it's still gravy in my world.

I don’t like soggy chips either. I have great difficulty with restaurants who plate meals with meat on top of chips. It ruins the chips.

i do love poutine, but will accept chips with gravy and ketchup as a substitute. i don't like chips that are fried soggy, but i do like them soaking up other food juice. if they get soggy from gravy, they aren't good chips.
(and after firing _that_ salvo, i'm off to bed.)

I lived on chips and gravy when I was a student. It was 50p in the union bar which left more cash for beer 😊.
