My French friend swears by a bowl of raw carrot, raw chopped garlic and olive oil when she feels illness coming on. Says the garlic stops the illness.
I've not been brave enough to try it, I like garlic but the next day I reek.

Sharing my favourite recipe, knowing full well that most people on this board won't like such a ... erm... full-bodied flavour to their food Pepper-garlic rice 2 cups of cooked white rice 2 tbsp oil of your choice 1 tbsp of black pepper , ground very coarse 15-20 cloves of garlic, pounded just so - not too fine. 2 sprigs of fresh curry leaves 1 dry red chili Salt to taste Heat the oil in a pan and add the crushed garlic to it. Slowly roast the garlic in low flame till it turns golden. It should just be crunchy and well roasted. Now add the tempering of fresh curry leaves and dry red chili and then add the fresh black pepper powder followed by the cooked rice. Season with salt and mix for everything to combine. Stir on in low temperature until the rice is infused with the lovely pepper and garlic aroma. Serve hot.

One of my favorite chicken recipes calls for 40 cloves,,and it isn't too strong...depends on how it is prepared. I plan on trying SC's dish!!

tzatziki mix yogurt cucumber fresh mint & fresh chopped garlic
i have also had that chicken w 40 cloves of garlic, delicious

Garlic sauce, for shawarma.
Crush garlic cloves (maybe 8 or 10?), add a few spoons of fritessauce (mayonnaise will do if you've got nothing better), a few squeezes of lemon juice, and a pinch of salt.

LOL, treehugger! Actually, when you shallow-fry the garlic till its crispy it loses a *lot* of its.. er.. fragrance Ria, with hot pickle, or raita (grated or chopped cucumber stirred into plain yoghurt with a dash of salt). Sophie, do let me know how you found the recipe.

Nutsy, if he could help it, my father would top *everything he eats with browned garlic! Tastes really great with bland daal,or biryaani (I know, sacrilege!!) imo.

Well, maybe put some steaming chicken broth, some noodles, some greens, sprouts and chopped veggies *under* the sunny side up egg. Sounds good, huh?

Soul - how big are your garlic cloves? Here in bleak city (Melbourne) the cloves one buys in the green grocer are about the size of my thumb above the first joint - often larger. 15-20 cloves would make up about 3 to 5 tablespoons when crushed.
I like to throw them in unpeeled with the vegies when doing a roast (leg of lamb for example) - they come out lovely and soft and mild flavoured.

jimm, not sure I understand the size you're indicating. The garlic cloves I use would be, say, an inch long. And, as I said, browning them until crisp takes out a lot of the garlicky flavour. Or maybe I wouldn't know, since, as an Indian, I'm used to strong flavours in my food.

And no one has mentioned roasted garlic..roast a few heads with some olive oil..when roasted, spread some soft mushy cloves over crackers or baguette slices...yummmmmmm...

My mother, being Russian, cooked with a lot of garlic and used it liberally when making pickles for winter. I remember asking her, when I was about 4, if there was a perfume that was like garlic since I liked the smell s much!

My ex would put a whole ball of garlic in the oven, let it bake on med temp for about 30 mins and thencrumble it on top of paella. It was lovely.
We use garlic almost every day, in anything.
If you want to be friends with us... better eat garlic too! ;-)

whole cloves, in skins, in a moroccan stew. i also love it roasted--how sweet it gets. also, slavic garlic soup is divine. it's a bit sharp, and i can never make it properly so i have to buy the mix.
there's a restaurant, in edmonton alberta (i think) which has garlic in everything. including the ice cream.
