That sounds strange, I grew up on zucchini bread, always tasty and moist. Yes, as long as you include fat in the batter it'll be fine. The usual ratio for a base batter is 1 butter:1 sugar: 2 flour. I honestly don't know why people want to add vegetables to cake... just have a salad FFS.
