I can't remember where all the various other places where this topic has come up were posted, so I figured I'd start yet another megathread.
My current dilemma is: I've got a thing of red curry paste in the refrigerator that says best by mid-2024, but I opened it in February. I figure it's fine, right?

Best by mid-2024 means while in its unopened state. Once it’s opened, all rules change. Once a jar of curry paste has been opened, even when it is stored in the refrigerator, you can expect that it will remain at its best flavor for the next two weeks. Its flavor will start to decline, and you can expect it to taste stale and less flavourful four weeks after opening.

If there's any fluff on the paste I'd toss it, but otherwise, good to go.

Seems the issue is it may not taste as good, rather than outright kill you. I'm fine with that, as long as it looks ok

I use *gasp* out of date curry paste - never done me any harm and the curry tastes fine with a bit of extra flavours that I throw in anyway

tzarevich left some elderberry syrup in his room its nearly 2 years old wish me luck If it hasn't blown its top, it's now elderberry liquor. WE have that with some elderflower syrup once. It was delicious but packed a punch.

Still haven't used the curry paste, but we did have potstickers last night that had been in the freezer since February, and have survived so far.

I fried up some smoked venison on its 'use before' date, and put the rest in the freezer. It was pretty good, but partner is nervous about the frozen stuff. My theory is, smoked meat. lives forever.

I thought that freezing, er, "reset" the use-by date thing. As in, it's fine to buy fresh meat that is discounted at the supermarket because it's got a short date and then freeze it.
I also read that the previous advice that if you were going to freeze meat you had to do it immediately when you got home, and not after it had been in the fridge a few days, has been withdrawn. It's fine to freeze later if the meat has been chilled consistently.

Yes, this stuff has been in the fridge and vaccuum wrapped until the day I froze it. I have done some dicey things with meat (hello, frozen cooked chicken forgotten overnight on the counter!) but so far, not even the runs!

Any distilled alcohol will be OK pretty much forever. If the seal isn't tight I suppose there could be evaporation, but nothing bacterial or otherwise dangerous.

I have so many opened like that jars in the fridge and use them for over 6 months because I often use a little bit as a flavour enhancedr. As long as refrigerated and not crawling away it's fine.
Just realised I fed n=my nephew Nutella that had a use by date of 2021 - it was unopened and he survived just fine.
IMO all this use by stuff is just health and safety crap. Like spices - they might not be as strong but still are fine to eat.
