I've also done a vege one with herby tomato sauce and grilled aubergine - sort of a cross over to melanzane parmigiano. All are delish. NIX ON THE SOY CHEESE

My mother never used a "béchamel" in lasagna. It was ricotta, mixed with fresh garlic, pepper, fresh chopped parsley, seasoned with oregano. She'd layer sauce, pasta, ricotta mix, mozzarella, sauce, pasta, ricotta, mozz... you get the idea. Every once in a while she'd add a layer of spinach or browned ground beef. But generally no meat.

I used to make a veggie version with spinach and cottage cheese as a layer, and a creamy mushroom sauce as a layer. That was very nice. But not real lasagne.
Now. milk in ragu?

And, if your lazy you can do the baked ziti version where you mix everything up in a tray and bake.
Something about the pasta, sauce, cheesiness about the whole thing.

I think I'll make lasagne this weekend ... Me too! Ah, possibly bit weather dependent. If it turns hot, I won't. But it has been cool and extremely rainy recently, definitely OK to turn the oven on.

I made nachos for dinner... with tomato, sour cream, avocado, spicy bean stew and melted cheese. Plus coriander
100% sure it was illegal if I asked any Mexicans or Texans, but it was 100% delish.

When I was a kid my grandparents would have tons of family over for outdoor parties where the old gentlemen would play horseshoes, and we kids would chase each other around, and everyone else would sit in folding chairs drinking beer and smoking cigarettes and talking. To feed the hordes my grandmother would get a bunch of pans of baked ziti from the Italian deli around the corner. Yum cheese.

No lie, I was in my late 30s when I learned that cottage cheese isn't the normal ingredient in a lasagne. Plan A: Marry Jimm, who knows how to use a dishwasher. Plan B: Refuse to pay for any more pans/lids/nice wine glasses (extra salt in DW scratches them). If he sneaks one on to the joint card, I'll know, and reduce my share of the bill accordingly--I'm the only one who see the CC statement. Petty, but that's me. You know if you live alone you never have to worry about how someone else uses a dishwasher? Just as a third option. True. But then it would be ME washing all the dishes.

Might try it soon. tzarevich used to open a jar of sauce & mix it w mozzarella, ricotta & romano & the ziti & pop it in the oven if we had fresh basil around, hed through some into the sauce mix along w fresh ground pepper

I'm on a low FODMAP eating regime (won't say 'diet' because that implies weight loss these days) in the testing phase. I cooked a batch of 'Low FODMAP 'bolognaise' sauce yesterday and because it does not have onion or garlic* and not much tomato, it's a bit strange. I don't mind it - it's food. * Onion is replaced with the green tops of spring onions (scallions in some parts of the world) and garlic is replaced with garlic infused olive oil. www.monashfodmap.com/I don't think I have IBS, but something eating and/or food related can make me feel nauseous and faint.

Hi Jimm Take care. Adjusting our aging digestive systems to our taste buds isn't easy. Spring onions give me hell but I can use a tiny bit of dried onion which I cook in water in the microwave first, pour of the water cook and hope. I have diverticulitis so feel your pain.
